As with all busy moms, I'm trying to use any time I get off to move forward so I don't always feel like I'm rushing, rushing, rushing! Are you with me?! So, Monday I had the day to myself, I was fighting the blues from the lack of sunshine, so I figured cookies would lift my spirits, and make my family SUPER happy that I spent some time thinking of them! The problem is, I hadn't been to the store for baking items in FOREVER!! I tweaked a few recipes I found and came up with this gem of a recipe, it'll definitely be a staple for the lunch boxes!
Chocolate Sugar Cookies
1 Stick of Crisco (or butter) melted
1 Stick of Crisco (or butter) room temp
1 1/2 cups sugar
1 tbls molasas (maybe a bit more if you're like me!!)
2 large eggs
1 1/2 tsp vanilla
1/2 tsp finely ground coffee (a flavored coffee might add some interest)
2 cups of flour
3/4 cup unsweetned cocoa
1 tsp baking soda
3/4 tsp salt
Using standard mixer, beat butters, sugar, and molasas until light and fluffy. Add in eggs one at a time and mix well. In a medium bowl, mix your dry ingredients with a whisk and slowly add them to the mixing bowl while mixer is on slow. Mix until a soft dough forms. Cover and refrigerate dough for 1 hour. Pre-heat oven to 350 degrees and bake for 8-10 minutes.
